Campus foodservice is a high priority for most colleges and universities, but for St. Norbert College, the only Catholic Norbertine college in the world, foodservice excellence is a mission.
Radical hospitality is a key tenet of the Norbertine way, and that means perfecting the student and guest experience.
“Food and beverage go with everything we do on campus,” said Melissa DaPra, director of dining for St. Norbert. “Our job in dining services is really to surprise and delight.”
Every noble calling has its roadblocks, however, and St. Norbert had plenty of challenges of its own. With roughly 2,000 undergraduate students on campus, the college keeps a small staff, and many employees serve multiple functions in a single position. Not an unusual arrangement for a campus its size, but according to DaPra, the staff also faced “pretty much the absence of workflow.”
